The Center for Middle Eastern Studies at the University of Texas at Austin has put together a great resource on Cairo, for K-12 educators and students. You can find it here.
I find that nonfiction resources targeted for students and children are sometimes more accessible and interesting than those available for adults. This is one of those resources, in my opinion.
